Cauliflower Soup

I might claim that this is the fastest and easiest, while still being delicious goodness, way to get some veggies in. I LOVE this recipe just as a soup on its own, usually drunk from a balls jar on the road, or as a base for other soups, or with other things mixed in (like throwing left over chicken in).

Oh, and its super easy.

Ingredients:

1 Large Onion Roughly Chopped

1 Head Cauliflower (or a bag of pre-chopped to save a couple of minutes)

About 8 cups of any stock you like. I have used Veggie stock, Chicken Stock, Beef Stock, I have even used packets of bone broth and water… they all work.

1tsp of salt if you use low sodium stock. If not, skip this.

Directions

1- Put all ingredients in a pot on the stove on medium heat or in a crockpot on low.

2- Cook until soft. Stove takes about 30 minutes, crockpot is about 4ish hours but can go for longer

3- Blend either with an immersion blender or in batches in a blenders. If you use a blender, let it cool first (otherwise it will explode, I know from experience).

Pro Tip! Store in Mason Jars filled to the 1 cup line- these are grab and go lunches for the road because this soup is good hot or cold.
