Very Veggie Chili
The base of this recipe is VEGAN, but you can spice it up any way you like (we added meat). As a crockpot meal, this one is super easy. It also freezes well! Cant get better then this! The down side, there are a good amount of ingredients, but variety is the spice of life… right?
Ingredients:
1 Onion, Chopped
2 Peppers (I like to use Orange ones), Chopped
1 Carrot, Chopped
1 Yellow Squash (Summer Squash, but you could likely use Zucchini instead), Chopped
1 Can Crushed tomatoes
1 can of drained/rinsed beans (I have used Kidney beans and I have used black beans; either were delicious)
1 Tablespoon minced garlic (about 3 or 4 cloves)
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon ground cayenne pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon ground black pepper
A pound(ish) of whatever protein you would like to use (options could be ground beef, shredded chicken, tofu, any other ground meat, chuck roast… really whatever you like), Cooked and in a form that is bite sized.
Cheese and/or tortilla chips to top if you like!
Directions
1- Put all ingredients, except the meat, in crockpot on low for 8 hours or so
2- Add cooked meat. I have used different meats here, none of them were seasoned, and they all tasted great.
3- Portion out. Makes about 6 servings.
Pro Tip! Store in Mason Jars- these are grab and go lunches, and can be stored in the Jars as long as they are cooled all the way!
