West African Stew
My husband and I love this recipe for the ease and the creamy peanut butteriness. MMMHHHHMMM. Healthy, quick, and easy…. that is a winner in out books!
Ingredients:
1 Large Onion Chopped
1 Head Cabbage Chopped (I prefer green, but red works well too!)
1 can (28oz) diced or crushed tomatoes
1 Cup Peanut Butter (I like to use crunchy, unsalted)
2 Tsp Turmeric
2 Tsp Salt (use less if you use salted peanut butter)
2 Tsp Black Pepper
OPTIONAL: I have added 2 Large Sweet Potatoes before, and it was DELICIOUS, but not necessary .
OPTIONAL: Stew meat can be added to the top to add a protein with no extra cooking. I have used lamb neck, pork butt, and chicken thighs. All delicious.
OPTIONAL: Garnish with Chopped bananas, avocado slices, peanuts, or cilantro to be fancy.
Directions
1- Aquire Crockpot (option to use a bag for quick clean up!)
2- Add all ingredients to the crock pot (minus optional garnish of course). I like to load the crockpot in order of ingredients listed (onion first, then cabbage, then tomatoes, etc)
3- If you want to add a stew meat, at it on top.
4- Cook on low, between 4 to 12 hours. If you add a meat, make sure the meat is done (might need at least 6 hours on low).
